Just add a pat of butter, a sprinkle of cinnamon or serve them plain. It is no more difficult to prepare sweet potatoes than white potatoes. If they are new to you just start by experimenting with one quick and easy sweet potato recipe.

Boiled sweet potatoes are used in many of our favorite recipes. To make boiled sweet potato recipes, place peeled, cubed sweet potatoes into enough boiling water to cover them. Cover the pan and return water to boiling. Lower the heat and cook until the sweet potatoes are tender. Drain and season with butter and salt to taste. A baked sweet potato is a great alternate to your usual baked potato recipe. To make basic baked sweet potato recipes, rub a bit of olive oil on clean and dry sweet potatoes. Place the sweet potatoes on a baking sheet and bake at 400 degrees F. until tender, 30 to 45 minutes, depending on size. Once baked, the oiled sweet potatoes will peel easily.

Sweet potatoes can be successfully cooked in the microwave oven. Before microwaving, scrub skin and trim off any bruised or woody portions. Pierce the washed sweet potatoes with a fork. Place on a paper towel in microwave oven. Turn sweet potatoes over halfway through cooking time. Cook on high power level until tender. Cooking time will vary according to your oven's power capacity.

To make French fried sweet potatoes, peel the sweet potatoes and cut into length-wise strips, about 1/2 inch thick. Use a french fry cutter if you have one. Heat oil in fryer to 365 degrees F. Keep the fry basket in the fat as it heats. Raise basket and add enough sweet potato strips to cover bottom of basket. Lower basket slowly into hot fat. If fat bubbles much, lift and lower basket until bubbling subsides. Fry until sweet potato strips are brown and tender. Remove from hot oil and drain onto paper towels. Sprinkle with salt, if desired. Spread sweet potato fries on baking sheet and place in a warm oven while others are being cooked. Another version of a sweet potato snack is sweet potato chips.

To grill sweet potatoes, scrub the sweet potatoes and rub oil into the sweet potato skins. Wrap aluminum foil loosely around the sweet potatoes. Cook over hot coals for about 30 - 40 minutes.

Prepare skillet sweet potatoes in a large deep skillet. Heat 1 1/2 inches deep of vegetable oil to 365 degrees F. Add sweet potato strips to cover the bottom of the skillet. Fry 5 minutes or until brown and tender. Remove from hot oil and drain on paper towels. Sprinkle with salt or brown sugar.
