Sweet Potato Souffle

Ingredients:

  • 4 cups sweet potatoes, cooked and mashed
  • 1/4 cup butter, softened
  • 1/2 cup sugar
  • 3 eggs, beaten
  • 1/4 teaspoon salt
  • 1/4 cup pecans, chopped

Directions:

Mix together the hot mashed sweet potatoes, butter, sugar, eggs, and salt until fluffy. Place mixture in a 1 1/2-quart baking dish and sprinkle with pecans. Bake at 350° for 45 minutes. 

Serve immediately.

Serves 6 

Sweet Potato Casserole

Ingredients:

  • 2 28-ounce cans sweet potatoes, drained and mashed
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 4 tablespoons melted butter
  • 1/2 cup chopped pecans
  • 1 cup crushed cornflake crumbs

Directions:

In a large mixing bowl, combine potatoes, sugar, eggs, vanilla and salt and place mixture in a 13” x 9” greased baking dish.

Mix together brown sugar, melted butter, pecans and crumbs and sprinkle the crumb mixture evenly over the top of the potatoes.

Bake at 350 degrees F. for 30 minutes.

Serves 8

Orange-Sweet Potato Casserole

Ingredients:

  • 6 sweet potatoes
  • 3/4 cup white sugar
  • 1 cup condensed milk
  • 6 oz. melted butter, divided
  • 1 egg
  • 1 teaspoon orange zest
  • 3 tablespoons orange juice
  • Salt and pepper, to taste
  • 1/2 teaspoon ground nutmeg, divided
  • 3/4 cup light brown sugar
  • 1 cup chopped mixed nuts, (walnuts, pecans, almonds, etc.)
  • 1/3 cup flour

Directions:

Bake sweet potatoes in a 375 degree oven for 45 minutes or until soft. Cool slightly and remove the skins. 

Increase oven temperature to 425 degrees. 

In a large bowl, mash together the potatoes, white sugar, condensed milk, half the melted butter, egg, orange zest and juice, salt and pepper and half the nutmeg. 

Put the sweet potato mixture into a greased 2 quart baking dish. 

Topping: Mix the remaining half of the nutmeg, brown sugar, nuts, flour and remaining melted butter and sprinkle over the potatoes.

Bake for 30 minutes. (If casserole begins to brown too quickly, cover with aluminum foil for the last 15 minutes of baking time.)


Sweet Potato Casserole Recipe With Crunchy Pecan Topping

Ingredients:

  • 2 pounds sweet potatoes
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 4 tablespoons melted butter

Topping:

  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 4 tablespoons melted butter
  • 1/2 cup chopped pecans

Directions:

Scrub sweet potatoes and boil in their skins until tender. As soon as they are cool enough to handle, slip off peels and mash. Stir in sugar and salt. Mix together the eggs, milk, vanilla, and 4 tablespoons melted butter. Stir into the mashed sweet potato mixture until well blended. Spoon mixture into a buttered 2-quart baking dish. Combine remaining ingredients; sprinkle over the sweet potato mixture. Bake at 350° for 35 to 45 minutes.
