Choose a candied sweet potato recipe - for when even sweet potatoes need a bit more sweet!
What we love about sweet potatoes is that they are sweet!
Sometimes we want to make that sweet taste even more intense. That's easy to do with a candied sweet potato. Here are a few recipes to choose from:
Boil peeled sweet potatoes until tender...about 20 minutes. Cut the cooked sweet potatoes in half and place in a baking dish, cut side up. Mix the juice, honey, and sugar together in a small bowl. Pour it over the sweet potatoes and bake in a 350 degree oven for 20 minutes.
Preheat over to 350 degrees. In a large mixing bowl, combine sweet potatoes, cream, butter, salt, sugar, eggs and sherry. Mix well.
Pout mixture into a well-oiled casserole dish.
Add Topping: In a small bowl, mix together the sugar, flour, and melted butter. Stir in the walnuts. Sprinkle the topping over the sweet potato mixture and bake for 45 minutes.
Slice 6 cooked sweet potatoes into a baking dish.
Make a syrup by bringing to boil: 1/4 c. butter, 1/4 cup brown sugar, 1/4 cup water and 1/2 tsp. salt.
Pour syrup over sweet potatoes in casserole dish.
Bake at 350 degrees for about 30 minutes, basting occasionally with syrup.
Put marshmallows on top and brown.
Microwave sweet potatoes for about 5 minutes or until just slightly tender. Melt butter in frying pan, add brown sugar and stir till dissolved. Add sweet potatoes, and spoon sauce over potatoes.
Cover and reduce heat to medium/low, depending on your stove. Cook until sweet potatoes are soft, and sauce has thickened approximately 30 minutes. Baste sweet potatoes with sauce occasionally.
Optional: Sprinkle top of candied sweet potatoes with miniature marshmallows and place in casserole dish in oven until browned.
