Our family's favorite scalloped potato recipe includes the flavor of mushrooms and lots of cheese.
4 pounds potatoes, peeled and thinly sliced
2 (10.75 ounce) cans condensed cream of mushroom soup, undiluted
1/4 cup butter, divided
2 cups sharp Cheddar cheese,shredded and divided
Combine sliced potatoes and soup in a large bowl. Layer half of the potato and soup mixture into a greased 13-in. x 9-in. x 2-in. baking dish.
Dot the scalloped potato recipe with half of the butter and sprinkle with half of the Cheddar cheese. Repeat the layers using all ingredients.
Bake the scalloped potatoes, uncovered, at 350 degrees F for 60-70 minutes or until the potatoes are tender and lightly browned.
Scalloped Potatoes With Bacon
Adding bacon, onion, garlic, or any of a number of other "fixings" to your best scalloped potatoes recipe is a great way to get rave reviews for your creative cooking. Here is one of our favorite variations:
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
3/4 cup milk
2 medium potatoes, peeled and sliced
2 small onions, sliced
3 bacon strips, cooked and crumbled
Melt butter in a small saucepan. Stir the in flour and salt until smoothly blended. Gradually add the milk. Bring the mixture to a boil, stirring constantly, for 2 minutes or until thickened.
Layer the potatoes and onions into a greased 1-qt. baking dish. Pour the white sauce over the top of the potatoes and onions. Cover and bake at 350 degrees F for 65-75 minutes or until potatoes are tender. Sprinkle with the cooked and crumbled bacon.
