Wedding Potatoes Otherwise Known as Potatoes Deluxe

2lb pkg. frozen hash brown potatoes, thawed for about an hour.
1 cup chopped onion
1 can cream of mushroom soup
1 pint carton of sour cream
1/2 cup melted butter
8 oz. shredded sharp cheddar cheese
1 tsp. salt
1/2 tsp freshly ground black pepper
Crushed Potato Chips

Preheat oven to 350 degrees Fahrenheit.

Mix all ingredients together well and put into a 9x13 casserole or cake pan. Cover with casserole cover or with tin foil and bake for about an hour.

Take off cover and top with crushed potato chips. Bake uncovered for another half hour to forty-five minutes until potatoes are well cooked and chips are crisp.

We call these wedding potatoes in my family because they were served at the reception of my oldest sister's wedding.
