Thanksgiving Sweet Potato Recipe
This once a year gathering of family and friends deserves a really special Thanksgiving sweet potato recipe. Here are several to choose from. All are delicious and easy to make.
Apple Cranberry Sweet Potato Bake
Ingredients:
6 med. size sweet potatoes
1/2 c water
1 c. sugar
2 c. fresh cranberries
1 lg. apple, thinly sliced
1/2 c. firmly packed light brown sugar
1/8 tsp. ground cinnamon
1/4 c. butter
1/2 c. orange juice
Boil sweet potatoes in water until nearly done. Drain and cool slightly. Peel and cut into 1/2" thick slices. In a medium saucepan, combine the 1/2 cup water, sugar and cranberries. Cook until the berries have just popped.
Preheat oven to 350 degrees. Grease a 9"x12"x2" baking dish. Arrange layer of sweet potatoes in the bottom, then a layer of apples. Next layer 1/2 of the cranberries and their liquid. Put remaining potatoes on top and spoon remaining berries over all.
Sprinkle with brown sugar and cinnamon. Dot with butter and pour orange juice over all. Bake for 30 minutes.

Thanksgiving Sweet Potato Recipe
This Thanksgiving sweet potato recipe uses canned sweet potatoes. That's a good shortcut when you have so many dishes to prepare. The tasty additions are what make this a really special holiday side dish.
2 (16 oz.) cans cut sweet potatoes, drained
1/3 c. evaporated milk
1/3 c. apricot brandy or brandy
1/4 c. butter, melted
2 tbsp. brown sugar
1 tsp. ground cinnamon
1/4 tsp. salt
1 (15 1/4 oz.) can crushed pineapple, drained
1 c. chopped pecans, divided
1/2 c. golden raisins
1/2 c. flake coconut
1 c. miniature marshmallows
Directions:
Combine first seven ingredients in a large mixing bowl. beat at low speed until blended. Stir in pineapple, 1/2 cup pecans, raisins and coconut. Spoon into a lightly greased 8 inch square baking dish. Sprinkle with remaining 1/2 cup pecans.
Bake at 350 degrees for 25 minutes; sprinkle with marshmallows and bake an additional 5 minutes.

Thanksgiving Berry and Sweet Potato Bake
Ingredients:
2 (17 oz.) cans sweet potato halves, drained
1 c. cranberries
1/4 c. chopped pecans
1/2 c. orange marmalade
1 1/2 c. miniature marshmallows
Directions:
Arrange sweet potatoes in 10"x6" baking dish. Top with cranberries and nuts. Dot with marmalade. Bake at 350 degrees 30 to 35 minutes. Sprinkle with marshmallows. Broil until lightly browned.
Serves 6 to 8
