Sweet Potato Soup Recipe

Sweet Potato Soup Recipe with Bacon
1 large sweet potato, peeled, quartered and sliced thin
1 small boiled potato, sliced thin
2 slices bacon
1 1/2 Tbsp. butter
1/3 c. minced onion
1 medium carrot, sliced thin
1 rib celery, sliced thin
1 bay leaf
2 c. chicken broth
1/3 c. dry white wine
Ground nutmeg and white pepper to taste
Sour cream and sliced scallion as garnish
Cook bacon until crisp and save for garnish. Add butter to bacon fat in skillet. Add onion, carrot, celery and bay leaf to skillet and cook, stirring occasionally, until soft.
Place onion/carrot/celery mixture in saucepan or soup pot. Add the sweet potato, white potato, broth, wine and 1/2 cup water. Bring to a boil and simmer for 20-25 minutes or until potatoes are tender.
Add seasonings and puree sweet potato soup mixture in a blender or food processor.
Serve garnished with bacon, scallion and sour cream.

Creamy Sweet Potato Soup Recipe
Ingredients:
2 Tbsp (1/4 stick) butter
1 cup chopped onion
2 small celery stalks, chopped
1 medium leek, sliced
1 large garlic clove, chopped
1 1/2 pounds sweet potatoes, peeled, cut into 1-inch pieces
4 cups chicken stock or canned chicken broth or vegetable broth
1 cinnamon stick
1/4 teaspoon ground nutmeg
1 1/2 cups half and half
2 Tbsp. maple syrup
The leafy tops of the celery stalks, chopped
Directions:
Melt butter in a large, heavy cookingpot over medium-high heat. Add the chopped onion and sauté for about 5 minutes.
Add chopped celery stalks and leek, sauté about 5 minutes. Add garlic and sauté 2 minutes.
Add sweet potatoes, chicken stock, cinnamon stick, and nutmeg.
Bring to boil, reduce heat and simmer uncovered until sweet potatoes are tender, about 20 minutes.
Remove cinnamon stick and discard. Working in batches, puree soup in blender until smooth. Return to pot.
Add half and half and maple syrup and stir over medium-low heat to heat through. Season soup to taste with salt and pepper.
Ladle into bowls. Sprinkle with celery leaves.
Serves 6 to 8
Chilled Sweet Potato Soup Recipe
2 cups cold boiled or baked sweet potatoes
1 quart buttermilk
2 or 3 scallions
Place 1 cup cold, cooked sweet potatoes in a blender or food processor. Add 2 cups of buttermilk and blend until smooth. With the blender running, slowly add the rest of the sweet potatoes the scallions and 1 more cup of buttermilk. Blend until smooth. Add more buttermilk as you choose until the sweet potato soup is the consistency that you prefer.
Serve chilled.
