Sweet Potato Salad Recipe

Two Recipes for Sweet Potato Salad...
One is Served Cold and the Other Warm.

A sweet potato salad recipe is a great addition to anyone's sweet potato recipe file.

We've always had favorite potato salad recipes using white potatoes. And we still love them.

However the first time I found a recipe for sweet potato salad I knew I had to start a new collection.

Here are a few of our favorites.

Favorite Sweet Potato Salad Recipe

Ingredients:

4 large sweet potatoes
1/4 cup mayonnaise
4 ribs celery, sliced small
1 small red bell pepper, seeds removed and diced
1 cup diced (1/2-inch) ripe fresh pineapple
2 scallions, (use white and green parts), finely chopped
Salt and pepper to taste
1/2 cup chopped pecans
Chopped fresh chives, for garnish

Directions:

Wrap each potato in foil and bake in a 400°F oven for 1 hour or until tender. Cool until easy to handle. Peel andcut into 3/4-inch chunks.

In a large bowl, combine the mayonnaise and mustard. Add the sweet potatoes, celery, red pepper, pineapple, and scallions. Toss gently. Season to taste with salt and pepper. Cover and refrigerated until chilled, about 1 hour.

Just before serving, fold in the pecans and sprinkle with the chives. Serve chilled.

Serves 8

Warm Sweet Potato Salad Recipe

Ingredients:

6 large sweet potatoes, peeled and diced
4 large baking potatoes, peeled and diced
1/2 cup mayonnaise
1/4 cup Dijon mustard
1/3 cup balsamic vinegar
1 teaspoon ground turmeric
1 tablespoon chopped chives
salt and ground black pepper to taste
2 slices crisply cooked bacon, crumbled
2 green onions, finely chopped
1 red onion, finely chopped

Directions:

Boil diced sweet and white potatoes in large pot of water until the potatoes are tender, but not mushy, about 20 minutes. Drain and cool slightly.

Combine the mayonnaise, mustard, balsamic vinegar, turmeric, chives, salt and pepper in a large bowl. Add the bacon, green onions, red onion and cooked potatoes and toss to coat. Garnished with extra chives or green onion.

Serves 12
