The sweet potato is not really a potato but your sweet potato recipe, and your taste-buds, won't care! We often have a baked sweet potato instead of a baked white potato with our dinner. Mashed sweet potatoes are a yummy alternate to the usual mashed potato dish.Sweet potatoes are on every list of healthiest foods; sweet potatoes will give you important nutrients. And they are so tasty!
A basic recipe for baked sweet potatoes, mashed sweet potatoes, boiled sweet potatoes and roasted sweet potatoes just takes a few easy steps.
Baked Sweet Potatoes
Wash the sweet potatoes and prick skins with a fork. Place in oven and bake at 350 degrees until done. It will take 45 minutes to an hour for them to be tender. You can shorten the time by microwaving the potaotes for a few minutes before putting them in the conventional oven. Cut an X in the top of the baked potato and fill the slot with butter. Sprinkle on a bit of brown sugar if you choose. Yummy!
Easy Sweet Potato Recipes:
- Microwaved Sweet Potatoes: Prick the skin of a couple of large sweet potatoes. Wrap the sweet potatoes loosely in plastic wrap and microwave for 10 to 15 minutes or until tender. Slice open and serve with butter or other toppings as you would a baked white potato.
- Boiled Sweet Potatoes: Peel several large sweet potatoes (allow one per person). Cut the sweet potatoes into chunks, place them in a cooking pot and cover them with water. Bring the water to a boil, lower the temperature and simmer the sweet potatoes until they are tender. (approx. 15 minutes)
- Mashed Sweet Potatoes: Bake, microwave or boil your sweet potatoes until they are tender. Mash them with a potato masher or a fork. Add a little butter and milk for creamier mashed sweet potatoes. Serve topped with a little brown sugar, cinnamon, cloves or ginger to taste.
- Roasted Sweet Potatoes: Peel several large sweet potatoes. Cut them into chunks and place on a baking pan. Cut a large onion into chunks and distribute the onion among the sweet potato pieces. Drizzle a small amount of olive oil over the sweet potatoes and onions. Roast in a 400 degree F oven for 40 to 60 minutes or until tender.
