Sweet Potato Pie

You would absolutely enjoy this sweet potato pie. Try it! My mom taught me how to make a potato pie using regular potatoes and one day I decided to use sweet potato instead and boy was I amazed with the taste. Awesome!!

Ingredients:

5 sweet potatoes
1 1/2 cups of grated cheese
1 cup of milk
1 egg
1 can cream style corn

Method:

Firstly be careful which sweet potato you buy. The skin of the candy yam (orange inside)is very similar looking as the skin of the sweet potato, which has a more white/yellow inside.

Peel the potatoes and cut them into quarters, that way they would cook faster. Put the quartered potatoes into a pot of water and put on the stove to boil. They should be tender in about 20-30 minutes.

When they are soft enough to be crushed with a potato masher, remove the pot from the stove and through out the water.

Using a potato masher, mash the potatoes (this can be done in the same pot that the potatoes were boiled in). Now add the cheese, milk, egg and cream style corn (the entire can). Season with a bit of salt and black pepper.

Thoroughly mix all the ingredients together and transfer the mixture to a baking dish.

Level off the top of the mixture, which is now in the baking dish, with the bottom of tablespoon. Sprinkle the top of the pie with some grated cheese. Put in your pre heated oven and allow to cook approximately 30 minutes.
