Sweet potato pie recipe Here are several sweet potato pie recipes. A sweet potato pie is a perfect dessert for a holiday table.

This southern treat is appreciated by everyone. You can make a traditional sweet potato pie or use some shortcuts with pre-prepared ingredients.

Traditional Sweet Potato Pie Recipe

Ingredients:

1 (9 inch) unbaked pie crust
2 cups cooked and mashed sweet potatoes
2 tablespoons butter, softened
2 eggs, beaten
1 cup white sugar
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 cup buttermilk
1/4 teaspoon baking soda
1 teaspoon vanilla extract
˝ teaspoon each: cinnamon, ginger and nutmeg (or to taste)

Directions:

Preheat oven to 350 degrees F.

Using two bowls: in first bowl stir together the mashed sweet potatoes, butter or margarine, and eggs. In a second bowl, mix together sugar, flour, and salt. Mix in spices as desired. Add to sweet potato mixture and stir well.

Mix together buttermilk and baking soda. Add to sweet potato mixture and stir well. Mix in vanilla extract. Pour filling into pastry shell.

Bake in preheated oven for about 1 hour or until set in center.

Sweet Potato Pie recipe

Sweet Potato Pecan Pie

Ingredients:

1 (9 - inch) unbaked pastry shell
1 pound (2 medium) sweet potatoes cooked and peeled
1/4 cup margarine or butter
1 (14 - ounce) can Eagle Brand Sweetened Condensed Milk, (NOT evaporated milk)
1 teaspoon grated orange rind
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
teaspoon ground nutmeg
1/4 teaspoon salt
2 eggs

Directions:

Preheat oven to 350 degrees F. In large mixer bowl, beat hot sweet potatoes with butter or margarine until smooth.

Add remaining pie ingredients. Mix well and pour into pastry shell. Bake for 30 minutes. Remove from oven and spoon Pecan Topping (recipe below) evenly over top. Bake for 20 to 25 minutes longer or until golden brown. Cool. Serve warm or chilled. Refrigerate leftovers.

Pecan Topping Directions:

In small mixing bowl, combine 1 egg, 3 tablespoons dark corn syrup, 3 tablespoons firmly packed light brown sugar, 1 tablespoon margarine or butter, melted, and 1 teaspoon maple flavoring. Mix well. Stir in 1 cup chopped pecans.

Makes one 9-inch pie

Sweet Potato Pie Recipes

Easy Sweet Potato Pie Recipe

Ingredients:

1 (24 ounce) package Simply Potatoes® Mashed Sweet Potatoes
1/3 cup firmly packed brown sugar
1 (5 ounce) can evaporated milk
1/3 cup Better'n Eggs®* or 1 whole egg
1 tablespoon melted butter or margarine
1/2 teaspoon ground pumpkin pie spice
1 (9 inch) refrigerated pie crust

Directions:

Preheat oven to 350 degrees F. In large bowl stir together all ingredients until blended.

Press piecrust into 9-inch pie pan. Crimp edges.

Pour sweet potato pie mixture into crust. Bake 40 to 45 minutes or until set. (when knife inserted in center comes out clean) Cover the crust with foil if it begins to brown too quickly.

Cool before serving. Refrigerate any leftovers.
