Spicy Sweet Potato Fries Recipe

Ingredients:

Sweet potatoes: one per person
1 T. olive oil
2 tsp. seasoning mixture

Seasoning Ingredients:

2 T ground coriander
1 T ground fennel
1 T dried oregano
1 T Aleppo Pepper (or use a smaller amount of cayenne pepper)
2 T kosher salt

Seasoning Directions:

Use a spice grinder to grind together the coriander, fennel, oregano, and Aleppo pepper. Mix in salt. (This makes a batch large enough for several sweet potato fries recipes. Store the extra in a small jar.)

Preheat oven to 425 F.

Peel sweet potatoes and cut into "french fry" strips... about 3 inches long and 3/4 inches thick.

Place cut sweet potatoes in a large bowl, toss them with the olive oil and seasoning mixture.

Spray a baking pan with non-stick spray.

Arrange the sweet potato fries in a single layer on the pan.

Bake for 30-40 minutes, turning the fries about every ten minutes.

The sweet potato fries will be lightly browned and slightly crisp when they are done.
