Spicy Potato Casserole

1 lb of ground beef
1 can of rotel (hot)
1 can of cream of chicken
1 jar of mushrooms ( you decide how much)
1/2 diced small green pepper
1/2 dices small onion
salt & pepper
16 oz sharp cheddar
8 med potatoes ( I use red or golden potatoes)
16 oz sour cream

brown hamburger meat and drain all fat then
mix in all other ingredients (but cheese )
add 1/2 cup water cook for only a few minutes


peel potatoes and slice
layer on 9x12 pan 1st layering the potatoes then
the meat and sauce mix. add cheese to each layer.

top off with remaining cheese and cover with
foil and bake for 1 1/2 hours.

serve hot with sour cream and cayenne pepper for
the people that really like it spicy...
