Sesame Potatoes

Par-boil potatoes for about ten minutes (they will be undercooked). When cool enough, peel off the skins and cut potatoes into 1.5cm cubes.
Fry cubes in a large, shallow frying pan in some sunflower oil along with with some very finely chopped fresh green chillies and very finely chopped or grated fresh ginger (as much or as little as you want: I chilli and 3cm knob of ginger is enough for four helpings, I reckon).
When potatoes are beginning to brown on the outside, toss in about two tablespoons sesame seeds and a pinch of salt. The sesame seeds will crispen and brown in three minutes or so and form a delicious, fragrant crust around each delectable cube of spicy potato.
All you need with these lovely potatoes is some plain-grilled meat or fish and a salad.
