Reuban Baked Potato Recipe

Ingredients:
6 large Russet or Idaho potatoes
Toppings: strips of deli corned beef, sauerkraut, shredded Swiss cheese, Thousand Island dressing.
Directions:
Preheat oven to 450 degrees F.
Scrub potatoes and pat dry
Pierce the skin of each potato with a fork.
Place potatoes on center oven rack.
Bake for about 1 hour or until tender when pierced with a fork.
Fill split baked potato with strips of deli corned beef and rinsed and drained sauerkraut. Add a little Russian or Thousand Island dressing, if desired.
Top with shredded or sliced Swiss cheese and microwave until cheese melts.
Serve immediately
