Potato Stew, a South Indian dish

This is an easy recipe. It can be used with chapathi or bread as main dish, or as side dish with rice.

Potato - 1 big one
Onion - 1 big one, cut into pieces.
Coconut - 1 cup paste or thick milk
Green chillies - 3 Nos, cut lengthwise.
Ginger - 1 tsp. finely chopped
Curry leaves - 4 Nos
Salt - as required
Coconut oil - 2 tsp


Method of preparation


Peel and cut the potato into big chunks. Cook in 1 cup water and mash it well.

In a cooking pan, add 2 tsp. oil and saute onion, green chillies, ginger pieces, curry leaves and salt.

Cook for 3-5 minutes in slow fire. Onion should not turn brown.

Add mashed potato and coconut milk. Cook for 3 minutes.

Smear 1 tsp. coconut oil on top. (optional)
