Many families have favorite potato salads and the recipes are passed down through the generations.
My husband's mother had her way of making potato salad; my mother had a different recipe for potato salad.
Neither of them wrote their recipe down; they just "knew how to make it."
We continue to make a traditional type of potato salad that we think combines the best of both. That recipe is below.
Classic Potato Salad
Combine mayonnaise, vinegar, salt, sugar, and pepper in a large bowl. Add potatoes and other ingredients; toss gently to combine. (Reserve a few hard-boiled egg slices for garnish.) Cover and chill for 2 or more hours for best flavor.

There are hundreds of varietys of potato salad. Many are served chilled however there are also many tasty recipes for warm potato salads.

Potato salads can be as easy as just four simple ingredients or as complex as those that include multiple ingredients and many seasonings and spices.
For these recipes you will want to find "low starch" potatoes. Some varieties of low starch potatoes include Red Bliss, Russet, and Yukon Gold. (Yukon Gold add a yummy "buttery" flavor to your recipes.)
Another idea is to use small, new potatoes in your recipes. These should be clean (scrubbed) but not peeled, boiled until tender, and used whole instead of the cut potato pieces that most recipes call for.
The flavorful additions that you add to your potato salad is what will give it "character." Take a basic potato salad recipe, add chorizo, chick peas, pimento, and fresh vegetable. Use a vinaigrette dressing. Voila! You now have a Spanish potato salad.
