Enjoy a Peruvian Potato Recipe



Potato recipes Peru
The Potato Recipes Peru page offers flavorful potato recipes from the country where potatoes were first cultivated as a food crop.

It’s believed that the potato actually originated in Peru. Potato recipes feature heavily in Peruvian cooking.

There are more than 100 varieties grown throughout the country, including the purple potato which has recently become a gourmet food in North America.

Papas B la Huancaina

Ingredients:

10 medium potatoes, cooked and sliced
1 small onion, finely chopped
3 tablespoons oil
4 hard-boiled eggs
juice of ½ lemon
2 tablespoons evaporated milk
½ cup ricotta or cottage cheese, sieved
10 black or green olives
2 teaspoons chili powder
Handful of fresh parsley, chopped
Salt and pepper to taste

Directions:

Simmer the onion in a small amount of water for a few minutes. Drain.

Mash the yolks of two of the hard-boiled eggs. Stir in the cottage cheese and season with chili powder, salt and pepper. Add the milk and mix well. Add the oil, lemon juice and cooked onion; mix.

Arrange the warm potato slices in a serving dish.Pour the cheese sauce over the potatoes and garnish with olives, sliced eggs and parsley.

Serves 4 to 6

Peruvian Potato and Cheese Casserole

Ingredients:

1 lb Peruvian potatoes, unpeeled and diced
2 large leeks, white part only, sliced
2 cloves garlic, peeled and diced
1 green bell pepper, diced
1 red bell pepper, diced
2 tbl olive oil
4 eggs
3/4 cup low-fat milk
1 cup quinoa, cooked
1 1/2 cups grated smoked cheddar cheese
Salt and pepper to taste
1 tsp thyme leaves

Directions:

Preheat oven to 350 degrees F.

Saute leeks and garlic in olive oil over medium heat. When these are tender, add red and green peppers, cover, and cook until peppers are just tender. Stir frequently.

In a large bowl, beat together the eggs and milk. Stir in the quinoa. Then add cheese, potatoes, pepper mixture, salt, pepper and thyme.

Oil a large baking dish. Place all ingredients in baking dish and bake for 35 to 45 minutes and until top is browned.

Serves 4
