Potato Curry with tomato, spices & coconut

1. Peel 2 small potatoes then simmer in a small saucepan til soft, then chop.
2. Mix together: 1 tomato, chopped; 1 small onion, chopped; 1/2 fresh hot green pepper(chili).
3. Heat in a saucepan: 2 tbsp. vegetable oil, 1/4 tsp mustard/cumin/sesame seed mixture, 1 dried hot pepper, 2 tbsp. cilantro, chopped, 1/2 clove garlic, diced.
4. when seeds pop, add: tomato mixture, 1 tsp cumin/coriander powder, 1/2 tsp tumeric, 1/2 tsp salt, 1/2 tsp masala.
5. Then add and toss gently: potatoes & 1/2 tsp lemon juice.
6. Turn off heat and add more cilantro and 1/4 cup fresh or dry unsweetened coconut.
7. You can add water to make gravy.
