Potato Cakes Recipe

A potato cakes recipe is a great way to use leftover mashed potatoes. Get creative with the addition of crab meat, smoked salmon or other tasty tidbits. Potato cakes can be made with either fresh or frozen potatoes.

Potato Cakes Recipe Easy Potato Cakes Using Mashed Potatoes

Ingredients:

2 c. leftover mashed potatoes
1 egg, beaten
1/4 c. flour

Directions:

Stir beaten egg and flour together. Then stir the egg mixture into the mashed potatoes. Form the resulting "batter" into patties. Dip both sides of the potato cakes into a bit of additional flour. Put a small amount of oil
or shortning into a heavy skillet and brown the potato cakes on both sides.

Add any of these tasty variations:
  • Chopped or ground ham
  • Diced onion
  • Crumbled cooked bacon
  • Red or green bell pepper
  • Shredded cheese (add at the end of the browning process)

Serves 4-8

Potato Cakes Recipe Using Hash Brown Potatoes

Ingredients:

1 lb. frozen hash brown potatoes, thawed
1/3 c. grated onion
1/4 c. flour
1/4 c. dairy sour cream
3 eggs
1 1/4 tsp. salt
4 to 6 tbsp. oil for frying

Directions:

Combine all ingredients: potatoes, onion, flour, sour cream, eggs and salt. Heat oil in a large skillet. Drop potato mixture, using about two tablespoons for each potato cake, into the oil. Press each potato cake with a fork to flatten. Fry until browned and a bit crisp on both sides, 4 to 5 minutes. Drain on paper towels.

Makes 16 3" potato cakes

You can also use dried hashbrown potato mix. This is a great alternative if you are making potato cakes for a large group.

Potato Cakes Recipe Using Fresh Potatoes

Ingredients:

3-4 white potatoes, peeled and grated
1 Tbsp. flour
1 egg
1/2 tsp. baking powder
1/2 tsp. salt
2 - 3 Tbsp. oil for frying

Directions:

Combine flour, egg, baking poweder and salt. Mix egg mixture with grated potatoes. Drop potato cake mixture into oil heated in a skillet and fry (turning once) until browned on both sides.
