Potato Cakes Recipe With Crab
This potato cakes recipe with crab meat makes a great addition to a party platter. Tiny crab potato cakes are a savory treat with any meal.
Potato Cakes With Crab
Ingredients:
1 lb. crab meat
1 cup mashed potatoes
1 med. onion, chopped
1 tbsp. butter
1 tbsp. flour
1/2 c. milk
2 hard-cooked eggs, chopped
Chopped parsley to taste
Flour, egg and crushed bread crumbs
Oil for deep frying
Directions:
Saute onion in butter; stir in flour then add the milk. Simmer and stir until thickened. In a mixing bowl, combine crabmeat, eggs, parsley and mashed potato. Add enough of the onion, flour and milk mixture to be able to form soft patties.
Chill the potato crab cakes. When thoroughly chilled, roll cakes in the flour, then the beaten egg, and last in the bread crumbs. Chill again uncovered.
Deep fry until browned.
For an elegant presentation, serve with Hollandaise sauce.
Herbed Potato Cakes with Crab Recipe
Ingredients:
1 lb. lump crab meat
2 Yukon Gold potatoes, boiled and mashed
2 eggs, beaten
1/2 cup chopped green onions
2 Tbsp. chopped flat leaf parsley
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked pepper
1 Tbsp. lemon juice
1 Tbsp. dijon mustard
2 Tbsp. Mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
Cornmeal for breading
Directions:
Combine all ingredients in a large bowl and mix well. Form the crab potato cake batter into patties. Roll the patties in corn meal and place on a cookie sheet. Chill the potato crab cake patties for several hours then fry them in a small amount of oil until they are browned on both sides.
