Potato Cakes Recipe with Roast Beef
Remove any fat from roast and cut beef into small pieces. Combine chopped beef, mashed potatoes and diced onion. Add the beaten egg and mix well.
Divide into 8 pieces and shape into patties (1/2" thick). Coat both sides with bread crumbs. Fry in hot oil until both sides are browned. Drain and serve garnished with parsley.
Potato Cakes with Beef Using Ground Beef
In a large mixing bowl combine diced onion and garlic and sauté in a little oil until lightly browned. Drain and add them to mashed potatoes. Season with salt, pepper and nutmeg.
Combine the sliced spring onions and parsley, and mix them with the mashed potatoes. Add ground beef and 1 egg; blend well. Form into small patties, dip both sides in egg whites and fry in hot oil until lightly browned.
