Potato Bread Recipe

Rosemary Potato Bread Dipped in Olive Oil...Yummy!

Potato Bread Recipe A potato bread recipe is a great way to use left over potatoes. This first recipe contains olive oil and is also a great dipping bread.

Rosemary Potato Bread Recipe

Ingredients:

1 c. mashed potatoes
1 envelope (¼ oz.) active dry yeast
3 c. white flour
1 c. whole wheat flour
2 t. fresh rosemary, finely chopped
2 t. salt
4 T. olive oil
1 c. warm water

Directions:

  • In a large bowl, combine yeast, white and wheat flours, rosemary and salt.
  • In another bowl, mash together the potatoes and olive oil, adding a small amount of water, if needed, for a smooth consistency.
  • Add potatoes to the flour mixture, then add about one half cup of water. Mix until a soft dough forms. Continue to add small amounts of water if needed.
  • Place dough on a floured counter and knead for 8-10 minutes or until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a clean cloth, place in a warm spot and allow to rise for an hour or until doubled in size.
  • Place the risen dough on a floured counter. Punch it down and then knead it for a minute or so. If you want to make two small loaves, divide the dough. Otherwise leave it as one ball.
  • Flatten the dough, then fold it over with a seam down the middle. Put the seam side down and shape the loaf into an oval and place on a baking sheet or large round loaf pan.
  • Cover the loaf with a clean cloth and allow to rise until doubled...about half and hour.
  • Preheat your oven to 400 degrees F. Bake the loaf (or loaves if you chose to make 2 small loaves) for 30-35 minutes or until golden brown and hollow-sounding when tapped.
  • Remove from oven and cool on a wire rack.

Baked Potato Bread Recipe

Ingredients:

1/2 cup milk
3 Tbsp. oil
1 egg, room temperature
2 and 3/4 cups bread flour
1 baked potato, scooped out of shell and mashed (about 1/3 cup)*You can bake a potato in the microwave for 4 - 5 minutes for this recipe.
1 tsp. salt
1 Tbsp. sugar
1/2 cup chopped onion
1 and 1/2 tsp, Active Dry Yeast

Directions: Bread Machine Method

  • Liquid ingredients should be at 80°F and all other ingredients at room temperature.
  • Place ingredients in bread machine pan in the order listed.
  • Select basic cycle and medium/normal crust. Do not use the delay timer.
  • Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time.
  • Remove bread when cycle is finished and cool.
