Oven Baked Cheesy Cottage Fries

Here is a recipe for a crispy potato that’s absolutely delicious, and it’s oven-baked, not fried. Add to that the fact that they’re easy to make, and you will have a recipe that is soon to become a favorite. These potatoes are a perfect accompaniment to any meal.

Many people don’t realize that potatoes are a major crop of Michigan; in fact, Michigan is one of the top ten potato producing states in the U.S. Here in Grand Rapids, potatoes are plentiful and inexpensive, so we’re always looking for great potato recipes – this one is a keeper!


Cottage Fries Recipe

Ingredients:

•3 potatoes, sliced thinly
•¼ cup water
•2 tablespoons butter, melted
•Rosemary, garlic powder, and salt to taste
•3 tablespoons parmesan cheese, shredded or shaved

Directions:

On a greased jelly roll pan, arrange the potato slices in a single layer, pour the ¼ water in the pan, brush the potato slices with the melted butter. Bake at 425 degrees for 20 minutes.

Remove from oven, sprinkle the potatoes with the rosemary, garlic powder, salt, and parmesan. Put under the broiler for 3 minutes. Serve.
