Norma's Cheesy Potatoes Recipe

Boil 8 medium potatoes (peeled) for 10 min. Then cool (I use either Yukon Gold or Red)
Grate cooled potatoes
Mix:
½ C melted butter
1 C sharp cheddar cheese (grated)
1 ½ C sour cream
½ medium onion minced or grated
Salt & pepper to taste
Add potatoes to the above mixture. Pour into a buttered casserole dish. Refrigerate overnight.
Remove from refrigerator and bake at 350* for 45 minutes.
* If frozen remove from the freezer at least 1 hr before baking.
I am making these potatoes right now for Christmas dinner tomorrow. I have much more complicated recipes, but my children always request I bring this particular cheesy potato recipe. This one is their favorite.
