My Mom's Potato Salad

1 1/2 pounds of red new potatoes

3 hard boiled eggs chopped (only use the yolk in one egg)

2 green onions-chopped (use the entire onion)

3 stalks of celery chopped

2 tablepsoons chopped fresh parsley

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon garlic powder

1- 1 1/2 cups reduced fat mayo-depending on how creamy you want it

Boil potatoes in a Dutch oven for 20 minutes until soft. Remove from boiling water and allow to cool. Cut the potatoes in bite size pieces leaving the skin on the potatoes. In a large bowl combine, potatoes and the remainder of the ingredients. Mix well so everything is combined. Allow at least one hour to chill in the fridge. Serve and enjoy. Serves about 6.
