Mediterranian Baked Potato Recipe

Ingredients:
6 large Russet or Idaho potatoes
Toppings: chopped tomato, sliced olives, finely chopped red onion, oregano, feta cheese and plain yogurt.
Directions:
Preheat oven to 450 degrees F.
Scrub potatoes and pat dry
Pierce the skin of each potato with a fork.
Place potatoes on center oven rack.
Bake for about 1 hour or until tender when pierced with a fork.
Top potatoes with chopped tomato, sliced olives, finely chopped red onion and oregano; spoon onto split baked potato.
Top with crumbled feta cheese and a spoonful of plain yogurt, if desired.
Serve immediately
