Mashed Sweet Potato Recipe

Whip up a mashed sweet potato recipe; you'll soon make it a favorite among your sweet potatoes recipes.

Mashed sweet potato recipe If you're thinking "meat and mashed potatoes," a mashed sweet potato recipe can add just the tasty difference to the same old meal. In most sweet potato recipes, (one exception is sweet potato fries), you can substitute canned or frozen sweet potatoes for fresh. Canned sweet potatoes are generally smaller; six to eight canned sweet potatoes are approximately the equivalent of four medium fresh sweet potatoes.

Here are a few yummy mashed sweet potato recipes to choose from.

Crunchy Topped Sweet Potato Mash

Ingredients:

3 lb. sweet potatoes
3/4 c. orange juice
2 tbsp. butter
1 1/2 tsp. cinnamon
2 lg. eggs
2 tbsp. brown sugar
1/2 tsp. nutmeg

Topping Ingredients:

1/2 c. flour
1/2 tsp. cinnamon
1/2 c. chopped pecans
1/4 c. plus 2 tbsp. brown sugar
1/4 c. butter, room temperature

Directions:

Oven bake sweet potatoes until tender. Skin and mash baked sweet potatoes. Add orange juice, eggs, butter, cinnamon and nutmeg. Beat until smooth. Add salt and pepper to taste. Place in buttered casserole.

Topping: Combine topping ingredients. Cut in until mix resembles coarse crumbs. Mix in pecans and sprinkle on top. Return to oven and bake until sweet potatoes are hot and topping is crisp.

Mashed Sweet Potato Recipe

Ingredients:

6 med. sweet potatoes
1/2 tsp. grated orange peel
2-4 tbsp. orange juice
1/4 c. brown sugar
1/4 c.butter
1 tsp. cinnamon
Miniature marshmallows
Pecans

Directions:

Boil sweet potatoes until tender. Drain sweet potatoes, peel and cut into chunks. With mixer on slow spped, mash sweet potatoes adding butter, orange peel, orange juice, brown sugar and cinnamon.

Spoon sweet potato mixture into casserole dish, top with miniature marshmallows and nuts. Bake at 350 degrees until browned.

Maple Mashed Sweet Potato Recipe

Ingredients:

3 or 4 medium sweet potatoes
1/4 teaspoon salt
2 tablespoons butter
2 tablespoons maple syrup
cinnamon, to taste
3 to 4 tablespoons half-and-half or milk

Directions:

Boil sweet potatoes until tender. Cool slightly and peel. Mash with salt, butter, and maple syrup. Add cinnamon to taste. Continue to mash with the milk or half-and-half to creamy consistency.

Mashed sweet potato recipe

Simply Divine Mashed Sweet Potatoes

Ingredients:

Vegetable cooking spray
1 (40 ounce) can cut sweet potato in heavy syrup, drained
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/2 cup chicken broth
2 cups miniature marshmallows

Spray a 1 1/2-quart casserole with cooking spray. Put the potatoes, cinnamon and ginger in a mixing bowl. Beat at medium speed until almost smooth. Add the broth and beat until potatoes are fluffy. Spoon the potato mixture into the prepared casserole dish. Top with the marshmallows. Bake at 350 degrees F for 20 minutes or until heated through and marshmallows are browned.

Serves 4

Vermouth Mashed Sweet Potatoes

Here's a mashed sweet potato recipe with a bit of a "kick." (Not really, of course. The alchohol burns off in the cooking process.)

Ingredients:

2 large sweet potatoes, cut into small pieces
2 oz. vermouth
2 Tbsp. brown sugar

Directions:

Put cut up sweet potatoes in a skillet with a little water. Cook, covered, on medium heat for about 15 minutes, occasionally breaking up and mashing the sweet potatoes. Add sugar and vermouth and cook 5-10 minutes more.
