Irish potato recipes are tasty for breakfast or dinner any day of the year. They're not just for Saint Patrick's Day!
The potato is often linked to the Irish and Irish potato recipes. White potatoes were, and still are, an essential staple in the diets of people throughout Europe. In Ireland the potato crop did extremely well for generations and many of our favorite potato recipes were developed in Ireland.
While there is not really a potato variety that is called "Irish Potato," we all know the heritage we have in recipes based on the creamy potatoes that are thought of as typically Irish. Visitors to Ireland are sometimes surprised to find that the Irish serve potatoes with every meal...including breakfast!

Enjoy this simple and good soup made with a white stock: water in which chicken or ham has been simmered. Allowed the stock to cool and then skim the fat from the surface before making your soup.
Simmer the onions and potatoes in the soup stock in a covered saucepan until tender. Add the butter and adjust the seasoning to taste. Puree some of the vegetable if you choose and add back to the soup. Serve in bowls and garnish with a bit of chopped parsley.
Peel potatoes, slice and cook until tender.
Combine mayonnaise and sour cream for dressing.
In a large bowl make alternate layers of potatoes, onions, mayonnaise and sour cream mixture, and bacon bits.
May be prepared a day ahead of serving.
Boxty: Irish Potato Griddle Cakes
Peel and grate raw potatoes and mix with the mashed potatoes. Add salt, pepper, onion and flour. Beat egg and add to mixture with just enough milk to make a "pancake batter" consistency.
Drop batter by spoonfuls onto a hot griddle or frying pan. Cook over moderate heat for about 3 minutes on each side, turning once.

Steam or boil shredded cabbage until tender. Drain cabbage and fold into prepared mashed potatoes. Add onions and season with pepper. Dot with butter and sprinkle with parsley.
Irish Potato and Apple Pudding
Stir the melted butter into warm mashed potatoes. Add a pinch of salt, and the flour, and mix well.
Add enough milk to make a soft dough. Roll out potato dough and line a 1-qt bowl with part of it. Reserving enough dough for the top of the pudding.
Fill dough with the sliced apples that you have sweetened to taste with the sugar.
Add 2 whole cloves, the lemon juice and the cider (or water). Dampen the potato pastry edges, lay the top on and press down.
Cover with foil and steam, or cook (set in a pan of boiling water up to the rim,) for 2 - 2 1/2 hours.
Cut pudding in wedges and serve with cream or custard.
