Hash Brown Potato Casserole

This hearty hash brown potato casserole is a rich accompaniment to any meal. Few recipes are as versatile as a potato casserole recipe. Make one as a side dish for grilled entrees, a baked ham, or roast chicken. Take this hash brown potato casserole to a 'potluck' or covered dish meal. Add it to a breakfast or brunch buffet.
This potato casserole recipe is rich with homemade goodness. Chunks of potato are enhanced with chicken stock, sour cream, and cheese. Top it all with a crunchy topping and bake until brown and bubbly. True comfort food!
Ingredients:
1 2-pound bag frozen hash brown potatoes, defrosted
2 cups sour cream
1 10 3/4-ounce can condensed cream of chicken soup
1 teaspoon salt
1/4 teaspoon ground black pepper
2 cups grated cheddar cheese
1/4 cup butter melted
2 cups corn flakes, crushed
Directions:
Preheat oven to 350 degrees F. Combine sour cream, cream of chicken soup, salt, pepper and cheese in a large bowl. Fold in hash browns and pour into a 3-quart casserole that has been sprayed with nonstick cooking spray.
Combine melted butter with the crushed corn flakes and sprinkle over top. Bake for 45 minutes.

Cheesy Hash Brown Potato Casserole
Ingredients:
2 lbs frozen hash brown potatoes, thawed or Idahoan Hashbrown Potato Mix
1/2 cup margarine or butter, melted
1 can Cream Of Chicken Soup
1/2 cup onion, chopped
2 cups Cheddar cheese, grated
1/2 teaspoon pepper
1 teaspoon salt
Directions:
Combine Cream of Chicken soup, chopped onion, melted butter, and seasonings. Mix well. Stir in Cheddarcheese and hash brown potatoes.
Place hash brown potato mixture in a 9×13 dish and bake at 350 degrees for thirty minutes, or until bubbly.
