HARIYALI ALOO

Ingredients
500 gms boiled and cubed Potatoes
100 gms finely chopped fresh coriander
50 gms finely chopped fresh mint
2 finely chopped green chillies
1 cm.piece ginger,finely chopped
1 teaspoon jeera
cumin seedspinch of aesfotida
2 tablespoons ghee
clarified butter1 tablespoon fresh lemon juice
salt to taste
Method
In a shallow pan,heat the ghee,add the jeera and aesfotida.
Next add the finely chopped chillies and ginger, stir and immediately add the boiled and cubed Potatoes, finely chopped fresh coriander and mint, toss lightly, or stir gently with a spatula, sprinkle the salt and lemon juice, mix well and serve hot,
