Hamburger Potato Casserole This hamburger potato casserole is a tasty and easy one-dish meal. Potato cassrole recipes are also a great way to use leftover meat and potatoes. You can substitute leftover roast beef, turkey, chicken or bits of leftover steak for the ground beef.



Ingredients:

3 - 4 cups boiled, cubed potatoes
2 cups cooked, cubed roast beef
2 tablespoons butter
2 medium (1 cup) carrots, cut into 1/4-inch slices
1 rib (1/2 cup) celery, sliced
1 medium (1/2 cup) onion, coarsely chopped
1/2 teaspoon finely chopped fresh garlic
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1/4 to 1/2 teaspoon dried thyme leaves
1/2 teaspoon pepper
1/4 cup chopped fresh parsley (optional)
4 ounces (1 cup)cheddar cheese, shredded

Directions:

Preheat oven to 375°F. Melt butter in a skillet until sizzling. Add carrots, celery, onion and garlic. Cook over medium heat, stirring occasionally, until vegetables are softened (6 to 8 minutes). Add all remaining ingredients except cheese. Stir until combined. Spoon mixture into ungreased 1 1/2-quart casserole.

Cover and bake for 30 minutes or until heated through. Remove from oven. Sprinkle casserole with cheese; cover. Let stand until cheese begins to melt (2 to 3 minutes).

Serves 4

Potato Puff Hamburger Potato Casserole

Ingredients:

1 pound ground beef
1/2 medium onion, chopped
1/2 cup celery, chopped
1 (10-ounce) package frozen peas, unthawed
1 can cream of asparagus soup
1/2 cup milk
Salt and pepper, to taste
1 (16-ounce) package frozen potato puffs, unthawed

Preheat oven to 375 degrees.

Cook crumbled ground beef until just done adding the onion and celery for the last 5 minutes of cooking. Drain excess grease then add the frozen peas.

Combine milk and soup and mix until smooth. Add soup mixture to the meat mixture. Add salt and pepper.

Place meat/soup/peas combo in a 9 x 13-inch casserole dish. Arrange frozen potato puffs on top--close together so they cover the entire casserole. Bake, uncovered, for 45 minutes to 1 hour.

Serves 6
