Grilled Potato Packs

My mother used to make these when we camped in Vermont/New Hampshire.

Very thin sliced russets.
Very thin sliced onions.
Sliced Green Peppers.
Sliced fresh tomatoes.
salt/pepper
bacon strips cut in half.
Heavy duty foil.

All the above is determined by how many packets you want. You can make one large one or individuals (as we do because some don't like peppers, onions or tomatoes).

On foil, place a strip of bacon cut in half, side by side. The idea here is to make the bottom 'covered' by bacon. Layer potatoes, onions, peppers, tomatoes then back to potatoes. Season with salt/pepper as you go. I do thin layers of each so I have at least 2 layers each and end with a top of potatoes. Place another strip of bacon on top of the potatoes (just like the bottom) Fold foil securely to seal.

On a grill that is screaming hot, put foil package on to get bacon on the bottom to start sizzling. Cook for about 5 minutes, turn over and cook the other side for about 5 minutes.. turn down heat to medium can finish cooking potatoes.

I usually will start this first and then cook by indirect heat while I get the rest of my dinner ready..
