German Potato Pancake Recipe

A Favorite Potato Pancake Recipe
Makes a Yummy Breakfast

This German potato pancake recipe is just one of several variations on basic potato pancake recipes.

German potato pancake recipe Most German potato pancakes are served with applesauce or have apples as an ingredient.

Many times German potato pancakes include bacon as an ingredient and/or sour cream as a topping.

Potatoes and eggs are basic ingredients as they are in most other potato pancake recipes.


Traditional German Potato Pancake Recipe

Ingredients:

3 lb. potatoes
3 eggs, separated
1 1/4 c. flour
1/2 tsp. baking powder
1/2 tsp. onion, grated
1 lg. apple, grated

Peel potatoes and put them in ice water for about 10 minutes. Grate the potatoes and drain them well. Place grated potatoes in a bowl. Add beaten egg yolks, flour, salt, and grated apple.

Beat the egg whites and fold them into batter. Drop tablespoonfuls of batter onto a greased skillet. Brown on both sides

German Potato Pancake with Bacon

Ingredients:

5 or 6 medium potatoes
4 thick slices smoked bacon
1 lg. onion, finely grated
2 1/2 tbsp. all-purpose flour
2 eggs, lightly beaten
Salt & pepper to taste
Pinch of grated nutmeg
1 1/2 tbsp. fresh parsley, minced
Vegetable oil for frying

Directions:

Fry the bacon until crisp; drain, crumble and set aside.

Chill potatoes in a large bowl of cold water for a few minutes. Peeled, grate and drain the potatoes. Add grated onion, flour, eggs, salt, pepper, nutmeg, parsley and bacon. Mix well.

Heat about 1 inch of vegetable oil in large skillet. Drop the potato mixture by spoonfuls into the hot oil. Flatten each pancake with a spatula to make 5 inch patties. Fry on each side until crisp and browned.

German Potato Pancake Recipe Variation

Ingredients:

4 large potatoes (about 1 1/2 lb.)
1/4 c. onion, finely chopped
3/4 c. flour
1/4 c. light cream
1 egg, beaten
1 tbsp. snipped parsley
1 clove garlic, minced
1/4 tsp. salt
Dash of ground nutmeg
Dash of pepper
3 tbsp. oil
Applesauce
Sour cream

Peel, shred and rinse potatoes; drain thoroughly. Spread potato and onion on paper towel; pat dry.

Stir together potato mixture, flour, cream, egg, parsley, garlic, salt, nutmeg, and pepper.

In large skillet, heat oil over medium heat until hot. Spoon about 1/4 cup potato mixture into skillet, flatten with back of a spoon to 3 1/2 inch pancake (for each pancake).

Cook about 5 minutes on each side, until golden brown, adding more oil if needed.

Serve immediately with applesauce and sour cream.

Makes 10-12 pancakes

Mini German Potato Pancake Recipe

These small German pancakes are great as a side dish with pork roast, with applesauce on the side. They are also great as a cocktail appetizer.

2 large potatoes, peeled and grated
1 small onion, grated
2 large eggs, well beaten
1 1/2 tbsp. flour
1/4 tsp. baking powder
1 1/2 tsp. salt

Grate potatoes and plunge them into cold water as you grate. Drain potatoes and wring them out paper towels to remove excess moisture. Add remaining ingredients; stir well.

Drop by tablespoonfuls into about 1/8 inch of hot oil in a heavy skillet. Turn to brown on both sides.

Makes about a dozen 3 inch pancakes.
