Diced Fried Potatoes

Here's a super simple fried potato recipe:

Cut 8 or 9 potatoes into medium-sized chunks.

Finely dice one medium onion and one green pepper.

Put all chopped ingredients in a frying pan and add a tablespoon of butter and just enough water to cover the mixture.

Fry until the potatoes are tender.

When done, pour off most of the water (leaving just enough so the mixture is a little soupy), then add a tablespoon of butter and salt and pepper to taste.

Serve hot.
