Delicious Gnocchi Recipe Made From Leftover Mashed Potatoes

Gnocchi can be made many ways, using flour, bread crumbs, or potatoes. The beauty of this recipe is that you can make leftover mashed potatoes into an amazing dish.

Homemade Gnocchi Recipe

Ingredients:

•2 ½ cups garlic mashed potatoes
•2 eggs
•2 cups flour
•1 tsp. nutmeg
•Salt and pepper to taste

Directions to make gnocchi:

Force the potatoes through a ricer or sieve to ensure they are finely mashed. Using a fork, stir in the eggs, then one cup of the flour, nutmeg, salt, and pepper. Add enough of the additional flour to make a moist, but firm dough.

Turn the dough onto a lightly floured surface, and knead and shape it into a ball. Divide the ball into 6 pieces, and roll each piece into a log. Cut the log into 1-inch pieces.

Put the pieces into a large pot of boiling salt water (ensure the water is rapidly boiling before adding the gnocchi). Cook the gnocchi until they float (stir once or twice to ensure they don’t stick to the bottom of the pot). Once they are done, drain the water and eat immediately.


Gnocchi serving ideas:

Butter, rosemary, and parmesan gnocchi: Mix gnocchi with melted butter, and lightly sprinkle with rosemary and freshly grated parmesan.

Marinara Sauce: Sprinkled with grated parmesan.
