Cumin-Roasted Sweet Potatoes

2 pounds sweet potatoes
2 cloves garlic
salt
2 tablespoons cumin
2 tablespoons olive oil
2 tablespoons lemon juice
freshly ground black pepper, to taste

Preheat broiler.

Cut the sweet potatoes into walnut-size chunks and transfer to a large bowl or plastic bag.

Mince the garlic and mix with a generous pinch of salt. Use the side of your knife (or the back of a wooden spoon) to press the salt and garlic to a paste.

In a small bowl, combine the garlic paste with the cumin, olive oil, lemon juice and pepper. Add this mixture to the bowl or bag of sweet potatoes and toss to coat evenly.

Transfer sweet potato chunks to a baking sheet. Broil for 10 to 15 minutes, moving the potatoes around every 5 minutes to brown evenly. Sweet potatoes are done when easily pierced with a knife and lightly browned.

Makes 4 servings.
