Crock pot potato soup is an easy potato soup recipe for busy days. Add a few simple ingredients, set the timer, and enjoy later.

Crock Pot Potato Soup
  • 6 large potatoes - peeled and cubed
  • 
1 large sweet onion - diced
  • 
1 quart chicken broth

  • 3 cloves garlic - crushed
  • 
1/4 cup butter

  • 2 1/2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 cup cream or half-and-half cream
  • 
1 cup shredded sharp Cheddar cheese

  • 3 tablespoons fresh chives - chopped

Toppings:

  • 1 cup sour cream
  • 8 slices fried bacon - crumbled
  • Shredded cheese

Place the cubed potatoes, diced onion, broth, crushed garlic, butter, salt and pepper in the  crockpot or slow cooker.

Cover and cook your crock pot potato soup on high for 4 hours or on low for 8 hours. 

When the potatoes are tender, mash the soup slightly with a potato masher. The potatoes should still be chunky. 

Stir in the cream, Cheddar cheese, and chopped chives and heat through (15 more minutes or so).



To serve, ladle soup into individual bowls and top with a dollop of sour cream, crumbled bacon, and additional shredded cheese, if desired.

Crock Pot Potato Soup with Ham

This easy potato soup recipe is a great way to use up leftover ham.

  • 7 cups potatoes - diced
  • 1 medium onion - diced
  • 1 large carrot - chopped
  • 2-3 cups ham - diced
  • 2 teaspoons parsley
  • 1 teaspoon thyme leaves
  • pepper to taste (don't add salt as the ham will provide enough)
  • 5 cups pre-made chicken broth 
  • 1 cup 2% milk
  • ½ cup sour cream

Add diced potatoes, onion, carrot, ham, thyme, parsley, pepper & broth to a crock pot.
Cook on low 7 hours, or high 3 hours.
Remove 2-3 cups of the potatoes/carrots and mash, then return the mashed mixture to the crock pot.
Add milk and sour cream. Stir and cook an additional 15 minutes. Add pepper to taste. Makes twelve 1-cup servings.




Cheeseburger Crock Pot Soup

This rich, thick potato soup is an easy potato soup recipe however it won't be easy on the waistline! Nevertheless it is a tasty, hearty soup that is wonderful on a cold winter night. 

Ingredients:

  • 7 - 8 cups potatoes - peeled and diced
  • 1 small onion - diced
  • 6 cups water
  • 2 pounds lean hamburger, browned, and drained
  • 1 (12 ounce) can evaporated milk
  • 1⁄2 pint heavy whipping cream
  • 1 pound Velveeta cheese, diced
  • 1 1⁄2 teaspoons onion salt
  • 2 teaspoons paprika
  • salt & pepper to taste

Directions:

Place hamburger, onion, potatoes, and water in your crock pot and simmer on a medium - low heat setting for 4-5 hours until potatoes are tender.

Add the remaining ingredients and cook for another 2 hours on a medium setting.
