Crockpot Potato Recipes

Crockpot Potato and Beef Stew is one of those all-in-one-pot meals that we love to make for an easy but oh so tasty dinner. Just serve it with some crusty bread or cornbread and you will be a star!

Ingredients:

  • 3-5 potatoes, peeled and cubed
  • 1 lb. carrots, peeled and cut into chunks
  • 1 large or 2 medium onions, cut into chunks
  • 2 lb. cubed stew beef
  • 1/2 cup flour
  • 1 Tbsp. paprika
  • 2 15 oz. cans beef broth
  • 2 15 oz. cans tomato sauce
  • I bag frozen baby peas
  • 1/2 cup soy sauce
  • fresh cracked pepper and minced garlic to taste

Directions:

Peel the potatoes, carrots and onions and cut all of the vegetables into chunks. Mix the beef chunks with the flour and paprika; mix until beef is coated with the flour mixture. Combine the tomato sauce, beef broth, pepper, garlic and soy sauce.

Place the stew beef in the bottom of the crockpot. Add the vegetables and pour the tomato sauce mixture over all. Stir until meat and vegetables are well-combined.

Cover the Crock-Pot and cook on high until the meat and vegetables are tender.

Add thawed baby peas, stirring to combine. Cook for an additional 30 minutes.



Crockpot Mashed Potatoes Recipe

These mashed potatoes are one of the crockpot potato recipes that we rely on at holiday times.

Ingredients:

  • 5 pounds red potatoes, cut into chunks
  • 1 tablespoon minced garlic, or to taste
  • 3 cubes chicken bouillon
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter
  • salt and pepper to taste

Directions:

Place peeled and chunked potatoes in a large pot of lightly salted boiling water. Add the garlic and bouillon and simmer together until the potatoes are tender...15 - 20 minutes. Drain, reserving the potato water.

In a large bowl, mash the potatoes with sour cream and cream cheese, adding the reserved water a little at a time until you have the desired consistency.

Place the potato mixture in your crockpot and cover. Cook on low heat for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste. 

Crockpot Scalloped Potatoes Recipe

Ingredients:

  • 2 lbs. potatoes (about 6 medium)
  • 1/4 t. pepper
  • 3 T. butter
  • 1 small onion, thinly sliced
  • 1 can cream of mushroom soup – (10 oz.)
  • 1/4 C. flour
  • 1 t. salt
  • 4 slices American cheese

Directions:

Peel and thinly slice the potatoes. Toss potato slices in 1 cup water to which you have added 1/2 teaspoon cream of tartar. Drain the potato slices.

Place half of the sliced potatoes in a greased crockpot. Top with half of the onion slices and the flour, salt and pepper. Add the remaining sliced potatoes and sliced onions. Sprinkle with the remaining flour. Add the butter and undiluted cream of mushroom soup.

Cover the crockpot and cook on low heat for 7 to 9 hours or on high heat for 3 to 4 hours. Add the cheese slices 30 minutes before serving.
