Cheesy Potatoes Recipe

What better comfort food than a cheesy potatoes recipe?

The first recipe below uses frozen hash brown potatoes.

It's great when dinner can be both tasty and easy!

Easy Cheesy Potatoes


  • 2 lbs. hash brown potatoes (partially thawed)
  • 1/2 c. chopped onion
  • 1/2 c. butter
  • 1 tsp. salt 
  • 1/2 tsp. pepper
  • 1 c. grated sharp cheddar cheese (or other cheeses of your choice)
  • 1 can cream of chicken soup
  • 1 c. sour cream 


Combine all ingredients and bake uncovered in a 9" x 13" pan at 350 degrees for 45 minutes. Top with shredded cheese, or parmesan cheese, or french onion rings. Bake for an additional 15 minutes

Yukon Gold Cheesy Potatoes Recipe


  • 2 lbs. (about 6-7 medium) Yukon gold potatoes, grated with skin on
  • 16 oz. sour cream 
  • 1/4 c. parsley
  • Freshly ground black pepper to taste
  • 2 T. olive oil
  • 1 (10 oz.) can cheddar cheese soup
  • 1 (10 oz.) can cream of mushroom soup
  • 1/2 c. butter, melted
  • 1 small can green chiles
  • 1/2 c. onion, chopped


Preheat oven to 350°. After grating potatoes, toss with parsley and black pepper in large bowl. Heat olive oil in large skillet. Cook potatoes in skillet until crispy and brown. Remove pan from heat.

Spray 9x13 baking dish with cooking spray. Place crispy potatoes in baking dish and pour buttery spread over. Mix remaining ingredients in large bowl, pour overtop and mix with potatoes. Bake in oven at 350°, uncovered, for 1 – 1 ½ hours.

Cheesy potatoes

Mashed Cheesy Potatoes Recipe


  • 6 medium potatoes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c butter
  • 1/2 tsp. baking powder
  • 3 tb light cream or half and half
  • 1/4 c milk
  • 1 1/2 oz cream cheese
  • 4 oz cheddar cheese
  • 2 egg yolks
  • 2 egg whites
  • 2 Tbs. grated parmesan cheese


Boil potatoes in their skins. Peel and put through a sieve or potato ricer. Add salt, pepper, butter, baking powder, and cream. Beat until well blended and butter is melted and absorbed into potatoes. 

Combine milk, cream cheese and cheddar cheese in a saucepan. Heat, stirring, until cheese melts. Add 2 T. heated milk at a time to potatoes, beating after each addition until all is used and potatoes are light and fluffy.

Stir beaten egg yolks into potatoes and mix well. Beat egg whites until consistency of meringue and fold into potatoes. *NOTE: Add 1 tsp. lemon juice to meringue just before folding into potatoes.

Pour into a 2-qt. ovenproof casserole, sprinkle with Parmesan cheese, and place in a 450 degree oven to brown. (approx. 15 minutes)

Cheesy Crock Pot Scalloped Potatoes


  • 1 pkg 16 (oz) frozen hash brown potatoes
  • 1 1/2 cup milk 
  • 1 can (10 3/4) cream of mushroom soup 
  • 1 cup (4 oz) shredded cheddar cheese
  • 1 small green bell pepper, chopped
  • 1/2 cup butter melted
  • 1/4 cup dried onion flakes
  • 2 Tsp diced pimientos
  • 1/8 tsp black pepper
  • 1 cup cheese cracker crumbs, divided 


Lightly grease crockpot. Combine butter, onions, hash brown potatoes, cream of mushroom soup, milk, cheese, green pepper, pimiento, black pepper and 1/2 c. cracker crumbs.

Put mixture into crockpot and top with remaining cracker crumbs. Cover and cook on High for 3 to 4 hours.
