Cheesy Ham and Potato Soup
Ingredients
6 medium potatoes, diced
1 cup chopped raw onions
1 cup diced lean ham
4 oz. Velveeta cheese
4 cups 1% or fat free milk
2 cups water
Directions
Saute ham and onion in large pot. Remove. Add milk, water, and potatoes. Cook until potatoes are tender. Remove potatoes with a strainer reserving fluid for later. Blend potatoes in blender and return to pot. Add ham, onions and velveeta and cook on low until cheese is melted.
Serves 8
