Cheesy Baked Potatoes

Cheesy Baked Potatoes

Make these cheesy baked potatoes with meat as a meal in itself or without meat as a side dish or vegetarian meal.

Ingredients:

6 large baking potatoes

Your choice of cheese: sharp cheddar, or other cheese, grated

Cubed ham, turkey , sausage, chicken, or other meat of your choice

Veggies like broccoli, whole kernel corn, as many kinds as you like

Butter, sour cream or ranch dressing to taste

Salt, pepper, garlic powder, chives to taste and what you prefer

Directions:

Scrub potatoes and rub skins with butter and coarse salt.

Pierce skins and bake in microwave oven
or wrap in aluminim foil and bake in 350 degree oven until completely tender. (about one hour)

Cut baked potatoes in half lengthwise. Scoop potato into large bowl, leaving a layer on skins to keep their shape.

Mix butter or margarine to taste, add seasonings, adding meat if desired. Sour cream or ranch dressing can be added next or served on the side.

Add veggies to mixture last...just before restuffing.

Using mixture, restuff shells, topping each half with shredded cheese.

Replace in oven until hot and cheese is melted.

Serve with bread, soup, salad or as a side dish to your meal.
