Cheese and Yogurt Potato

I like this recipe because you can put it together for a quick and tasty one-person meal or prepare it for many.

Ingredients for single serving:

1-1/2 potatoes
1/2 cup plain yogurt.
Grated Parmesan cheese.
2 Tbs olive oil.
Optional 1 chopped fresh tomato.
Salt and pepper to taste.

Scrub 8 or more potatoes, leaving the skin on.
Cover with water and boil them until the skins crack. Dump off the water and let the potatoes cool. You can eat them now or store them in the refrigerator to use later.

Take about 1-1/2 potatoes and cut them into small pieces in a bowl. Add 1/2 cup of yogurt and oil. Add a small amount of water and mix. Add the chopped tomato if desired. Cover with parmesan cheese, salt,and pepper to taste. Heat this in the microwave or on the stove until piping hot and serve.
