Easiest Best
Mashed Potatoes Recipe

Because boiling potatoes with their skin intact can keep them from becoming "mushy," a great solution is to peel the potatoes after they are boiled.

Here are the simple steps:

  1. Place whole, scrubbed, unpeeled russet potatoes in enough water to just cover them.
  2. Boil the potatoes until they are "fork tender."
  3. Remove from heat, drain, and peel.
  4. Mash as usual.
  5. Add butter, sour cream, etc to taste.

We think you will like the more intense potato flavor and the drier (not watery) consistency.

Basic Mashed Potatoes Recipe

Choose your potatoes by the results you want: for light, fluffy potatoes choose russets. You may prefer Yukon Golds for your mashed potatoes because of their buttery flavor. In either case, follow these simple steps:

  1. 2 pounds of your potato of choice - Russet or Yukon Gold (scrubbed)
  2. 1 cup of half and half slightly warmed (microwave briefly if you choose for warming).
  3. 4 Tablespoons of unsalted softened butter. (Divide into four equal portions.)
  4. Salt and pepper to taste.

  • Place unpeeled potatoes in large pan or cooking pot.
  • Cover with cold water, and bring to a boil over high heat.
  • Reduce heat, cover, and simmer until just tender when pricked with a fork. (approx. 20 minutes)
  • Place cooked potatoes in a clean kitchen towel to protect your hands from the heat. Use a paring knife to peel. Place peeled potatoes in a clean, dry saucepan.
  • Use a food processor or potato masher to mash.
  • Add half and half and salt to taste.
  • Season with salt and pepper to taste.
