Beef Burrito With Potatoes Recipe
Ingredients:
4 large tortillas
3 cups shredded Cojack cheese
Sour cream and cilantro (optional)
4 cups shredded beef
3 cups potatoes, cooked and cubed
1 ½ cups corn
3 tablespoons oil
½ cup onions, chopped
4 garlic cloves, minced
2 tablespoons flour
2 cups beef broth
2 cups tomato puree
1 tsp. oregano
1 tsp. salt
½ tsp. cumin
3 tablespoons sugar
3 tablespoons chili powder
Dash of cinnamon
Directions:
Heat the oil in a skillet, add onions and garlic –cook until tender. Add flour and whisk for 1 minute. Add beef broth and whisk until thick. Add tomato puree and spices to taste. Cook for 20 minutes, stirring occasionally.
To assemble burritos:
Spread a little oil in a large skillet or griddle. Heat tortillas on both sides until slightly brown. In heated tortilla, put a little sauce in the middle, put on some meat, put a little more sauce, layer on some potatoes and corn. Fold in the sides of each tortilla and fold over the ends. Put seam side down in a baking pan, spread with sauce and cheese. Heat at 350 degrees for 10 minutes. Serve with sour cream and cilantro.
