Stuffed Baked Sweet Potato RecipeIngredients:6 med. sweet potatoes 2 tbsp. butter 1 c. shredded pineapple 1/4 c. chopped walnuts 1 tsp. salt 12 large marshmallows Juice of 1 orange Directions: Wash potatoes. Bake in 350 degree oven until done but still firm. Cut in half lengthwise and scoop potato flesh out of skins. Mash scooped out potatoes, adding butter, salt and orange juice. Stir in pineapple and walnuts. Refill potato half-shells with mixture. Cut each marshmallow in half and place two halves on top of each potato half-shell. Place in hot oven until marshmallows are heated through and slightly browned on top. Serves 6
Grated Baked Sweet PotatoIngredients:2 1/2 c. peeled, grated sweet potatoes 1 c. sugar 2 tsp. vanilla 1 stick butter, melted 1 c. milk 1 egg Cinnamon to taste Directions: Stir ingredients together. Bake in casserole dish at 400 degrees for 45 minutes. Serves 2
Spiced Sweet Potato BakeIngredients:3 lbs. sweet potatoes 1/2 c. sugar 1/4 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 3 tbsp. butter, melted 1 c. milk Directions: Cook sweet potatoes until tender in boiling salted water; prick with fork to check. Peel and mash. Add sugar, butter, salt and spices. Stir in milk. Put in buttered casserole. Sprinkle with nutmeg and sugar. Bake at 400 degree for 30 to 35 minutes. Serves 6
Onion Baked Sweet Potato RecipeIngredients:2 medium sweet onions 2 medium sweet potatoes 2 tbsp. Parmesan cheese 2 pats of butter Directions: Peel onions and slice into 5 equal slices. Scrub potatoes well and cut into 6 equal crosswise slices. Dredge onions and sides of potatoes in cheese. Reassemble potatoes with a slice of onion between each slice of potato. Wrap each sweet potato in aluminum foil that has a pat of butter on it. Seal foil and bake at 375 degrees for 45 minutes. Serves 2
