The Fourth of July holiday often sends us on a search for potato salad recipes. Some of us like the classic potato salads and others would love something new and different. Here is a recipe for a potato salad in patriotic colors that will be a hit at your gathering and is good at any time of the year.

Red White and Blue Potato Salad

Ingredients:

1 pound small white potatoes
1 pound small red potatoes
12 ounces Purple Peruvian potatoes
3 tablespoons olive oil, divided
8 garlic cloves, finely chopped
3 tablespoons white balsamic vinegar
1 cup finely chopped red bell pepper
4 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/3 cup chopped walnuts

Directions:

Cut unpeeled potatoes into 1 1/2 inch pieces. Steam-cook for 25 minutes or until potatoes are tender.

Heat 1 tablespoon olive oil in a medium skillet. Add garlic and sauté for 10 minutes. Add balsamic vinegar and stir well.

In a large bowl toss potatoes with oil/garlic/vinegar mixture. Add additional 2 tablespoons olive oil, red pepper, green onions, salt and pepper. Garnish with walnuts.

Serve warm or chilled.

If you prefer the “tried and true” potato salad, here is one version of the classic potato salad recipe:

Classic Picnic Potato Salad

Ingredients:

3 pounds medium-size red-skinned potatoes (about 12)
1/4 cup white vinegar
1 tablespoon olive oil
2 teaspoons spicy brown mustard
1 1/4 teaspoons salt
1/4 teaspoon black pepper
1/2 cup mayonnaise
1/3 cup whole milk
2 small celery stalks, thinly sliced
2 green onions, minced

Directions:

Scrub potatoes and cut into 1-inch chunks. Place potatoes in a large pot with enough water to cover. Heat to boiling over high heat. Reduce heat to low; cover and simmer for 8 to 10 minutes, until ­potatoes are fork-tender.

In a large bowl whisk vinegar, oil, mustard, salt and pepper together.

Drain potatoes and add to bowl with vinegar and seasonings. Stir gently until potatoes are evenly coated and vinegar is absorbed. Cool for 15 minutes.

In small bowl, whisk, mayonnaise and milk until smooth. Add mayonnaise mixture, celery and green onions to potatoes. Gently stir until mixed. Chill well before serving.
