To get you started, here is one of our favorite Thanksgiving potato recipes:
Thanksgiving Garlic Mashed Potatoes
- 6 - 8 large Russet potatoes, peeled and cubed
- 3/4 cup (1.5 sticks) butter (*Note: this recipe does not call for milk; the butter provides the creaminess you want!)
- 4 cloves of garlic
- Salt and pepper to taste
Bring a large pot of water to a boil. Add salt to the water once it reaches a boil.
While the potatoes cook, place the butter in a small pot over medium-low heat to melt. Chop and mash the garlic into a paste. This helps to really get that buttery/garlicky taste into every bite of the potatoes.
Add the mashed garlic to the melted butter. Drain the cooked potatoes and mash them together with the garlic butter. Add your choice of fresh herbs or parsley to garnish.
We will have 22 people, family and friends, at our Thanksgiving table this year. I love the large gathering and opportunity to share food and give thanks together.
